Two thin waffle halves with syrup between them. Invented in Gouda, probably around 1810, from bakery scraps and syrup.
Poor man’s biscuit
The first stroopwafels were made from crumbs and leftover dough, with syrup as cheap sweetening. They were called poor man’s cakes. Only much later did they become an export.
Fresh off the iron
A fresh stroopwafel is warm and pliable, nothing like the packaged biscuit. The difference is bigger than people expect, and Gouda market stalls live on it.
On top of your cup
The standard trick: rest the waffle on your coffee, wait a minute, and the syrup softens again. It works, and it is not a tourist invention.
The size
Fresh waffles are larger than supermarket ones. They fit exactly on a cup, which is not a coincidence.
