The fat

Beef dripping gives a flavour vegetable oil cannot match. Many places in Limburg and Brabant hold to it; north of the rivers vegetable oil is more usual.

Fresh potatoes

Peeled and cut on the premises rather than from frozen. The difference shows in the shape: fresh chips are irregular, and that is a good sign.

Fried twice

First at a hundred and forty degrees to cook through, then rested, then at a hundred and seventy for the crust. The resting stage is what most places skip.

The paper cone

A paper cone with the sauce on top rather than beside. That is the Flemish way and the ordinary one in Limburg.
