The growth
What was long treated as a compromise has become a category of its own. Almost every Dutch brewery now makes an alcohol-free version, and not only of pils.
How it is made
Two routes: removing the alcohol after brewing, or steering the fermentation so that little alcohol forms. The second usually keeps more flavour.
Zero point zero
Legally, «alcohol-free» may contain up to 0.5 percent. Brands that reach actual zero say so prominently.
Mocktails
Cocktail menus now carry an alcohol-free section as standard, built on bitter aperitifs and fermented syrups rather than sugar.
Ordering
Asking for zonder alcohol is understood everywhere.
