Autumn bock
Late September, around the first Friday of October, the autumn bock arrives. Dark, malty, six to seven percent. The Bock Beer Festival in Amsterdam opens the season.
Spring bock
In March, paler and fresher. Many breweries make both.
Where the name comes from
From Einbeck, the German town where the style began. In Bavarian speech Einbeck turned into ein Bock, a billy goat. The animal on the label is a later joke.
What to eat with it
Stews, game, aged cheese. The sweetness holds up against heavy food.
