Amsterdam roasted coffee for Europe long before it drank it well.
The history
The Dutch East India Company carried coffee plants from Yemen to Java in the seventeenth century, and Amsterdam became the trading centre for European coffee.
The word java as a synonym for coffee comes directly from that trade.
The new roasters
Since roughly 2010, dozens of small roasteries opened in Amsterdam, Rotterdam and Utrecht, buying single-origin beans and roasting lighter than the traditional Dutch style.
What to order
A filter or pour-over shows the bean more clearly than an espresso does. Good places will tell you the farm.
The older style
Traditional Dutch roasts are dark and used for filter coffee by the pot. Both styles now sit side by side.
