Baron Hop

Hendrik Hop, an envoy in The Hague around 1792, left his coffee with cream on the stove until it thickened. What remained was a chewy mass he liked. His confectioner turned it into sweets.

Why hard

The sweet is boiled sugar with coffee extract and cream. It dissolves slowly and is not meant to be bitten.

The tin

Loose in a tin or wrapped singly. The tin with its classic label is a Hague souvenir in itself.

Protected name

Haagse hopjes is a registered regional designation. Sweets from elsewhere may be coffee sweets, not hopjes.
