The white gold of the south, with a season that ends on a fixed day.
Why white
The spears grow under an earth ridge and never see light, so they form no chlorophyll. Once the tip breaks through it turns purple and must already have been cut.
The handwork
Cutting is done by hand, daily, with a special knife. Machines cannot do it, which explains the price.
The 24th of June
The season ends on St John’s day, not a day later. After that the plant must recover for next year, and the date is strictly kept.
The classic plate
Boiled asparagus with ham, egg, melted butter and potatoes. Restaurants in Limburg and Brabant build whole menus on it.
Where they grow
The sandy soils near Venlo, Horst and the Peel, and the Brabantse Wal near Bergen op Zoom. The latter holds a protected designation.
