Chunks of white fish in batter, deep fried, served with garlic sauce or ravigotte. The best known fish dish on any Dutch market.
Where the name comes from
From cod cheeks, the offcuts fishermen kept for themselves. The word originally meant that trimming, not something you bought.
Which fish goes in
Once cod, now usually coley, pollack or hake. A sign may only say cod if there is cod in it, which costs more and is therefore rare.
The batter
Flour, water or beer, and seasoning that differs by stall. It has to stay thin: heavy batter gives a crust that drowns the fish.
The sauce
Garlic sauce is standard, ravigotte the alternative. Ask for both and you get both, which is the usual order.
Kibbeling and lekkerbek
A lekkerbek is a whole fillet, kibbeling are pieces. Same batter, different size, different price.

Fish stalls on markets, coastal fish shops, and snack bars almost everywhere.
