North of the rivers it is patat, south of them friet. The line runs roughly along the Rhine and the Waal, and Dutch people place you by that one word.
The mayonnaise
Dutch fritessaus is not real mayonnaise: less fat, slightly sweeter, with vinegar. It legally cannot be called mayonnaise, so signs say fritessaus.
Patatje oorlog
Mayonnaise, peanut sauce and raw onion mixed together. The name means war, referring to the mess on the tray. It is not a refined order and that is the point.
