Small airy pancakes made with buckwheat flour, cooked in a cast iron plate of shallow dimples. Served with butter and icing sugar.
The plate
A poffertjes pan has shallow round wells and must be cast iron: the point is even heat. An ordinary frying pan will not do it.
Buckwheat
The original batter is part buckwheat, which gives a nuttier taste than plain pancakes. Many modern recipes leave it out, and it shows.
Why they rise
Yeast, not baking powder. The batter has to rest before it hits the pan, and that is what makes them light.
The turn
Halfway through they are turned a quarter with a fork or knitting needle. Done right you get spheres; done late you get discs.
