About Surinamese roti

Surinamese roti is a company with a local service area.

Flatbread with chicken, potato, long beans and masala. Surinamese by way of the Netherlands, with Indian roots.

How it got here

Indian indentured labourers arrived in Suriname in the nineteenth century and brought roti with them. After independence in 1975 much of the Surinamese population moved to the Netherlands, and the dish came too.

The bread

Thicker than the Indian version, often folded with ground yellow peas between the layers. That filling is called dhal and keeps the bread from drying out.

The chicken

On the bone is the classic version and, according to those who care, the better one: the bone flavours the masala. Boneless is easier to eat and less good.

Eaten by hand

Tear off a piece of bread and use it to pick up the filling. Cutlery arrives if you ask.
