Two layers of puff pastry with confectioner’s custard between and pink icing on top.
The eating problem
Press down and the top slides off while the custard escapes. There is no tidy solution and it has become part of the pastry. Some eat the icing separately first.
Why pink
No historical reason, just habit. On King’s Day they turn orange, and bakeries sell hundreds.
The name
After Tom Pouce, the stage name of a nineteenth century French dwarf who performed in the Netherlands. The pastry is named for his size.
The filling
Confectioner’s custard, made with egg yolk and starch, not whipped cream. Cream versions exist and are a different thing.
