For seven days a year Nijmegen becomes an enormous outdoor kitchen. The organisation behind the city festival around the Four Days marches publishes its own figures: well over a million visits in a week, between one hundred and two hundred and fifty thousand people a day, and a festival ground of 1.8 million square metres of the inner city.
Well over a million litres of drink pass through it in that week, and the total spending effect is put at 64 million euros. That last is an effect of spending, not hospitality turnover and not city income.
For a caterer this is not background but the working year: seven days of peak weigh here against months of ordinary trade.
