The burger
Around 2010 places appeared grinding their own meat, baking their own buns and working with fixed butchers. A different category from the chains, and the price shows it.
Barbecue
Low and slow smoked meat: brisket, pulled pork, ribs. It takes equipment and time, and the places doing it seriously can be counted.
Breakfast
Pancakes with bacon and syrup, eggs benedict, and brunch as a format. The concept did not exist here and is now in every city.
What became Dutch about it
Burgers with mayonnaise, and the habit of taking chips with sauce alongside. Americans order it differently.
The chains
Present since the 1970s, with the McDonald’s in Zaandam the first branch on the European mainland in 1971.
