Moving from home kitchen to restaurant kitchen took a long time, and the change is recent.
Why late
The first generation cooked at home and opened butchers and shops instead. Restaurants came with the second generation, from around 2000.
The tagine
A stew in an earthenware pot with a conical lid that circulates the steam. Lamb with prunes, chicken with lemon, vegetables with couscous.
Harira
A soup of tomato, lentils and chickpeas, eaten to break the fast during Ramadan. In that month it is on every menu.
The tea houses
Mint tea with plenty of sugar, pastries, and no alcohol. Quieter than cafés, with their own public and their own hours.
The butchers
Halal meat, often the best quality in the district for the price. Dutch customers without religious reasons buy there too.
