Represented for a long time by the Tex-Mex formula, and only recently by genuine Mexican cooking.
The old formula
Nachos, fajitas on a sizzling plate, and large margaritas. That came from the United States in the 1990s, not from Mexico.
What changed
From around 2015 taquerías opened using corn tortillas made from nixtamalised flour. That is a different product from the wheat wraps of the older places.
The tortilla
Real corn tortillas are smaller, thicker and tear more easily. A taco on a wheat wrap is Tex-Mex, and the difference is visible at once.
Salsa and heat
Dutch venues keep the heat low and serve salsa separately. Asking for something hotter is understood and usually granted.
