The two-sided square
On any market square one side is full and the other empty, and it shifts through the day. Anyone who knows the pattern knows where to sit.

Maastricht, terraces on three sides. The west side catches the evening sun and is busiest after six.
The Utrecht wharves
On the water, a floor down. Which quay has sun changes hourly, and locals know exactly which.
On the river
Deventer, Zutphen and Nijmegen have west-facing quays with evening sun over the water. In summer that is the best of the city.

The season runs March to November because terraces are equipped for it. At fifteen degrees and sun, everything fills.
