A region created by peat cutting, with straight canals, ribbon villages and a kitchen without frills.
How it began
From the seventeenth century the high peat was dug for fuel. Workers came from elsewhere and lived along the canals that carried the peat away.
What was eaten
Potatoes, bacon, rye bread and coffee. Poverty here was severe into the twentieth century and the kitchen reflected it.
Potato starch
After peat came the potato. The starch industry shaped the region for a century and the factories still stand.
Eierbal and snack bars
Northern territory. Every place has a snack bar with eierbal, often the only hot kitchen in the village.
