Shop and fryer in one, at the harbour or on the market. At the good ones there is a queue.
What is on display
Herring, kibbeling, lekkerbek, smoked mackerel and eel, shrimp. The balance between fresh and fried varies by shop.
Freshly fried
Kibbeling that has sat under a heat lamp is lost. At busy stalls that is not a problem, so the queue is a quality signal.
Hand-peeled shrimp
Costlier and better. Machine-peeled shrimp are often shipped to Morocco for peeling and brought back, which does not help the taste.
On the market
Every Dutch market day has at least one fish stall. In many towns it is the only source of fresh fish.
