The best known fish dish on any Dutch market.<\/p>\n<h2>Where the name comes from<\/h2>\n<p>From cod cheeks, the offcuts fishermen kept for themselves. The word originally meant that trimming, not something you bought.<\/p>\n<h2>Which fish goes in<\/h2>\n<p>Once cod, now usually coley, pollack or hake. A sign may only say cod if there is cod in it, which costs more and is therefore rare.<\/p>\n<h2>The batter<\/h2>\n<p>Flour, water or beer, and seasoning that differs by stall. It has to stay thin: heavy batter gives a crust that drowns the fish.<\/p>\n<h2>The sauce<\/h2>\n<p>Garlic sauce is standard, ravigotte the alternative. Ask for both and you get both, which is the usual order.<\/p>\n<h2>Kibbeling and lekkerbek<\/h2>\n<p>A lekkerbek is a whole fillet, kibbeling are pieces.
