Served with butter and icing sugar.<\/p>\n<h2>The plate<\/h2>\n<p>A poffertjes pan has shallow round wells and must be cast iron: the point is even heat. An ordinary frying pan will not do it.<\/p>\n<h2>Buckwheat<\/h2>\n<p>The original batter is part buckwheat, which gives a nuttier taste than plain pancakes. Many modern recipes leave it out, and it shows.<\/p>\n<h2>Why they rise<\/h2>\n<p>Yeast, not baking powder. The batter has to rest before it hits the pan, and that is what makes them light.<\/p>\n<h2>The turn<\/h2>\n<p>Halfway through they are turned a quarter with a fork or knitting needle.
