A herbal bitter built on jenever, with a mix of herbs and roots. Frisian in use, Amsterdam in origin.
The man behind the name
Hendrik Beerenburg ran a herb shop on Amsterdam’s Haarlemmerstraat and sold the spice mix. Frisian skippers carried it north, where it stayed while Amsterdam forgot it.
What goes in
Gentian root, bay, juniper and up to thirty other herbs depending on the distiller. Recipes are not shared.
Why skippers
It was taken against cold and stomach trouble at sea. Whether it worked matters less than that the habit stuck: Beerenburg belongs to the fishing towns of the Wadden coast.
How to drink it
Neat, cold, in a small glass. Not mixed, not over ice.
