A flat tart of yeast dough with fruit filling, usually thirty centimetres across. In Limburg it belongs at almost every occasion.
Yeast dough, not pastry
That is what separates it from other fruit tarts. The base rises, stays soft and light, and has nothing of an apple pie crust. Made with puff pastry it becomes something else.
The fillings
Cherry, apricot, plum, gooseberry, rice. Rice vlaai has a creamy filling and forms a category of its own with its own following.
The lattice
Some vlaaien carry a dough lattice, others are open. Which filling gets which top is fixed per bakery and not casually changed.
When it appears
Birthdays, funerals, communions, fairs. There is no gathering in Limburg without one, and quantities are counted in slices per head.
