Thin crisp wafers, rolled into tubes while hot. Made around New Year in Zeeland and Brabant.
The rolling
The wafer comes hot off the iron and must be rolled around a stick within seconds. Let it cool and it snaps. This is two-handed work.
What is in it
Flour, butter, sugar, egg and cinnamon. Some recipes add lemon zest or a splash of jenever.
Filled or not
In Zeeland usually empty, in Brabant more often filled with cream just before serving. Filled ones must be eaten at once or they soften.
Other names
In Brabant they are nieuwjaarsrollen or knieperkes, in the north kniepertjes. Same biscuit, different place.
The symbolism
The flat wafer stands for the old year, the rolled one for the new. So the explanation goes, and on New Year’s Eve both shapes are eaten.
