Carnival in the Dutch south is a company with a local service area.

Four days when cities take other names and hospitality runs on an entirely different schedule.

The names

Den Bosch becomes Oeteldonk, Eindhoven Lampegat, Breda Kielegat, Maastricht Mestreech, Venlo Jocus Riek. Using the ordinary name marks you as an outsider.

What the kitchens do

Many restaurants close the kitchen or limit themselves to snacks. Revenue comes from drink, and a full menu does not fit the pace.

What is available

Worstenbroodjes, frikandellen, burgers and salt herring. Street sellers and snack bars run at full capacity.

Herring on Ash Wednesday

The day after carnival the south traditionally eats herring, marking the start of the fast. In some towns it is a public event.

Fried dough

Belongs to carnival as it does to New Year. In Sittard it is called nonnevot, elsewhere something else.
